Bourbon Street Chicken


The first recipe I am going to share was given to me by my sister Tami. The first time I made it, it was a little sweet. After talking to Tami, she said sometimes when she makes it, it tastes a little different depending on the brand of ingredients she uses. But it is always good!

Bourbon Street Chicken

2 Lbs. boneless, skinless chicken breasts, cut into bite sized pieces.
1/2 Tbsp. olive oil
1/3 cup brown sugar
1 clove garlic, crushed
2 Tbsp. ketchup
1/4 tsp. ginger
1 Tbsp cider vinegar
3/4 tsp. red pepper flakes
1/2 cup water
1/4 cup apple juice
1/3 cup soy sauce

Heat oil in large skillet. Add chicken pieces and cook until lightly browned. Remove chicken and set aside. Add remaining ingredients to skillet, heating over medium heat until well mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes. Serve over hot white rice.

Makes 4 servings
