Low Sugar Teriyaki Chicken



I found this recipe at this site, http://kalynskitchen.blogspot.com/2006/01/weekend-herb-blogging-14.html. It was a very easy recipe. I would be great with some stir fry vegetables or rice. As you can see I served my with broccoli, which was an excellent side also.

Low sugar Teriyaki Chicken

4 well trimmed, boneless, skinless chicken breasts
1/2 cup soy sauce
1/2 cup water
1/4 cup sugar
1 Tbsp brown sugar (optional)
1 Tbsp ginger puree or fresh grated ginger
1 Tbsp garlic puree or fresh garlic, finely diced

Preheat oven to 375 degrees. Put everything except meat in small sauce pan, simmer about 15 minutes. Until reduced by 1/3 to 1/2. Cut small slits in chicken. Choose smallest casserole dish that fits chicken in single layer. Place chicken in, slit side down. Pour about 1/3 sauce over top. Cover with foil and bake about 25 minutes. Turn meat over. Use pastry brush to brush sauce over meat. Cook 20 to 25 minutes more, basting every five minutes. If want to serve extra juice simmer for a few minutes.

**I only used about 1/8 cup sugar. But did use the brown sugar.
**I poured all the sauce over meat before putting in the oven. When I served it, I spooned some of the juice from the pan over top.

Mountain Dew Apple Cobbler





This recipe was posted on a forum that I read. It was very easy with few ingredients. I thought it would be too sweet, but it wasn't. It smelled so good.

Mountain Dew Apple Cobbler

2 Granny Smith apples, peeled, cored, cut into 8 pieces each
2 cans (8count) crescent rolls
2 sticks butter
2 cups sugar
1 can (1 1/2 cups) Mountain Dew
cinnamon
chopped pecans

Wrap each apple section with a crescent roll. Place in a lightly greased 9x13 pan. Melt butter, mix in sugar. Pour over apples. Pour Mountain Dew over, DO NOT mix. Sprinkle with cinnamon and nuts. Bake uncovered at 350 degrees for 45 minutes.

**I cut this recipe in half.
**In my opinion it would be good with a scoop of vanilla ice cream on top. Then pour a little of the extra juice over that.

Malted Milk Ball Cupcakes / Frosting




I found this recipe online. I made some for Christmas. I think my Dad and husband were having a contest to see who could eat the most.

Malted Milk Ball Cupcakes

1 box yellow cake mix
1 cup malted milk balls, coarsely chopped/crushed**
1/4 cup malted milk powder
water, oil, and eggs called for on cake mix box
1 2/3 cups malted milk balls, crushed, for garnish**

Heat oven to 350 degrees. In large bowl mix cake mix, malted milk balls, and malted milk powder. Add water, oil and eggs. Beat on low about two minutes. Divide among muffin cups. Bake 21 to 26 minutes, until toothpick comes out clean. Cool completely before frosting.

**Put milk balls in freezer about 30 minutes for easier chopping/crushing
**Sprinkle over top after frosting

Malted Milk Ball Frosting

1/4 cup butter, softened
2 cups powdered sugar
2 Tbsp malted milk powder
1 Tbsp unsweetened baking cocoa
2 Tbsp milk

Beat all until smooth on medium speed.

**I just crushed the milk balls and rolled the cupcakes around in them. You could also just sit a couple milk balls on top.

Skinny Chimichangas



I found this recipe online. It was really simple. Most the ingredients are stuff I usually have on hand. I did do them wrong but they still taste fine. The cheese is supposed to be on the inside. I had them all rolled and was reading the directions, when I discovered they were wrong. Anyway, I just added the cheese to the top and went on about cooking them. Of course mine were not "skinny".

Skinny Chimichangas

1/2 Lb ground skinless turkey breast
1 onion, finely chopped
1 clove garlic, minced
2 tsp chili powder
1 tsp dried oregano
1/2 tsp ground cumin
1 (8oz) can tomato sauce
2 Tbsp mild green chilies, chopped
1/3 cup shredded cheddar cheese, reduced fat
4 (8inch) fat free flour tortillas

Preheat oven to 400 degrees. Spray skillet with non stick spray. Brown meat with onion, garlic, chili powder, oregano and cumin over medium heat. Stir in tomato sauce and green chilies, bring to a boil. Reduce heat and simmer about 5 minutes. Remove from heat, stir in cheese. Warm shells in oven about 10 minutes, wrapped in foil. Spoon about 1/2 cup filling into each shell. Fold in sides and roll. Place seam side down in baking pan. Lightly spray tops with non stick spray. Bake until golden and crisp, about 20 minutes. Top with salsa and fat free sour cream.

**I used ground chuck instead of turkey.
**I used canned green chilies. The small can is a little more then needed.
**I did not use fat free shells, fat free sour cream, or reduced fat cheese.
**When I used 1/2 cup filling as I rolled it oozed out the edges. I cut back on the amount of filling and used more shells. I used a 10 count bag of shells.

Bulgogi



I have never heard of this recipe. A couple of the things I look for before trying a new recipe are easy instructions with few ingredients. This recipe fit both for me. I always have most of these ingredients on hand. The only thing I had to buy special were the green onions and the meat.

Bulgogi

1 1/2 Lb top sirloin or a tender steak, sliced thin
3 Tbsp sesame seeds
1/2 cup sugar
3/4 cup soy sauce
1/4 cup vegetable oil
4-6 green onions, sliced
2 cloves garlic, minced
1 tsp black pepper

Brown the sesame seeds in about 1/2 tsp butter. Stir constantly, let cool. Crush in a zip top bag. Combine with remaining ingredients, excluding meat, and mix well. Add meat and marinate at least one hour.

Remove from marinade. Stir fry on high heat. Once cooked, transfer to plate. Pour left over marinade into pan and simmer about 10 minutes, until thickens. Add meat back to sauce and heat through. Serve over rice.

**Was a little sweet. Next time I will only use about half the sugar.
**I served with a stir fry mixed vegetables with rice blend from my local supermarket.

Oatmeal Chocolate Chip Cookies

I made these cookies a few days ago. I didn't have any chocolate chips so left them out. I did however have some walnuts. I'm not sure how the chocolate would be in them, but the nuts worked out perfectly.

Oatmeal Chocolate Chip Cookies

1 1/2 cups packed brown sugar
1 cup butter, softened
1 tsp vanilla
1 egg
2 cups quick cooking oats
1 1/2 cups all purpose flour
1 tsp baking soda
1 cups semi sweet chocolate chips
1 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Mix brown sugar and butter until blended. Beat in vanilla and egg until light and fluffy. Mix in oats, flour and baking soda. Stir in chocolate chips, and nuts if using them. Drop onto ungreased baking sheet, about two inches apart. Bake for 9 to 11 minutes.

Meatball Ziti

















This is a recipe I found online. When I saved it I wrote Kalynskitchen.blogspot.com on my recipe card. However, I can't find the page it is on to give you a link.

Anyway, this is sort of a two part meal. Making the meatballs and then making the actual meal. Being as there is only two in my household this made way too much. Next time I will half the recipe. I ate a couple of the meatballs before mixing them with anything, they would be great on spaghetti. Or even use this recipe to make a meatloaf.

Meatballs

1 Lb ground chuck
1 Lb ground veal
2 cloves garlic, minced
1/2 cup flat leaf parsley, finely chopped
1 cup bread crumbs
1/2 cup grated Parmesan cheese
2 eggs, beaten
2 Tbsp milk
1 tsp salt

Preheat oven to 350 degrees. In large bowl mix all. Roll into balls about two inches in diameter. Place in shallow baking sheet, lined with foil. Bake about thirty minuted, until brown.

**I used two pounds of ground chuck and omitted the veal.
**I used dried parsley, 1/4 cup.

Meatball Ziti

1 batch meatballs
1 Lb ziti, cooked to Al Dente
6 cups fresh marinara, or two jars sauce
1 (2Lb) tub whole milk ricotta
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup grated Romano cheese
3 Tbsp unsalted butter, sliced in thin pieces

Preheat oven to 350 degrees. Break up meatballs into bite sized pieces, set aside. In large bowl combine sauce, ricotta, and half of the other cheeses, mix well. Add cooked pasta and meatballs, toss together. In large greased baking dish, pour in pasta mixture. Sprinkle top with rest of mozzarella, Parmesan and Romano. Dot with butter. Cook about 40 minutes, until brown and bubbly.

**Some of the bigger meatballs I cut in half. I made about half of them small to start with, so left them as is.
**I did not have ziti, I used Penne instead, it worked fine.
